Just put the fish on your hand, and the Stalker will eat it. The other thing you can do is offer them a fish. These Subnautica creatures are weirdly very fond of metal, so if you have any metal salvage, drop it, and the Stalker will focus on the metal instead of you. There are quite a few different versions of the Rock Puncher, for instance, that look different from one another. There are two ways you can deal with Stalker. Keep in mind a lot of what is in the concept art undergoes a lot of changes when it is put into the game. But already I can see some similarities to creatures like the Rock Puncher, the Reefback, the Spine Eel, and so on.
